2. Grading & Certification
Japanese Wagyu is evaluated using a dual system:
- • Yield Grade: A–C
- • Meat Quality Grade: 1–5
A5 represents the highest achievable standard. Each certified carcass includes official grading documentation, traceable identification, and verified prefectural origin. Protected regional names further restrict supply.
3. Supply, Demand & Export Controls
